Personally I find it to be a lot of fun, especially when it comes to mixing in level gimmicks.

Sonic level design is more complex that people give it credit for, even in modern titles, level design retains these complex traits for the most part.

If your REALLY stuck,try looking at a level map from a Sonic game and directly copy a piece of the layout. Oh, and fill it with gimmicks. They are both essential to the feel of Sonic and good at filling space.
